Ingredients:

  • 2 overripe bananas
  • 2 eggs
  • 3 tbsp chia
  • 2 tbsp fax
  • 2 scoops protein powder (I use 1st Phorm Vegan power pro)
  • 2 cups gluten free old fashioned oats
  • 1/2 cup pecans (optional)
  • 1/2-1 cup almond milk
  • 2 cups of fruit of choice (peaches are pictured)
  • 1/4 cup maple syrup

Directions:

  1. In a large bowl smash bananas until smooth, mix in eggs, chia, and flax until fully blended
  2. Add in protein powder and oats. blend completely. Add in almond milk a little at a time until batter like consistency.
  3. In baking pan spread out fruit in bottom and drizzle with maple syrup, pour batter over
  4. Bake 375 degrees for 25-30 min. The edges will be golden brown and batter cooked.

Store any leftovers in refrigerator.
