Ingredients:
- 2 overripe bananas
- 2 eggs
- 3 tbsp chia
- 2 tbsp fax
- 2 scoops protein powder (I use 1st Phorm Vegan power pro)
- 2 cups gluten free old fashioned oats
- 1/2 cup pecans (optional)
- 1/2-1 cup almond milk
- 2 cups of fruit of choice (peaches are pictured)
- 1/4 cup maple syrup
Directions:
- In a large bowl smash bananas until smooth, mix in eggs, chia, and flax until fully blended
- Add in protein powder and oats. blend completely. Add in almond milk a little at a time until batter like consistency.
- In baking pan spread out fruit in bottom and drizzle with maple syrup, pour batter over
- Bake 375 degrees for 25-30 min. The edges will be golden brown and batter cooked.
Store any leftovers in refrigerator.
